Cooking Class / Dinner: A Week of Salads to Go

The “Mason Jar” method of batching salads has revolutionized my life. We'll work together, collegially and assembly-line fashion, to create a week's worth of salads-to-go for each participant.

We'll make 3 different dressings and combine them with about a dozen other ingredients. Limited ingredients, infinite variety of convenient, healthy deliciousness!

You'll leave with 7 delicious Mason Jar salads, as well as the knowledge and muscle memory to recreate this method whenever you want. Plus we'll share a filling salad for dinner when we're doing packing our jars.

Cooking Class: Healthy Desserts You Can Make in Your Sleep

I used to think that desserts, treats and sweets had to either be

A) delicious, or
2) healthy

I now believe otherwise. I own 50+ plant-based cookbooks, and I'm not entirely embarrassed to admit that I always turn first to the dessert chapter. As a result, I've grown a large repertoire of plant-based cookies, cakes, pies, and snacks.

IMG_8642I think of them as my surprising little ambassadors for a healthy lifestyle. You know, bring them to dinners and potlucks and serve them to guests, and then casually mention that they are made entirely of whole plant foods.

Some are downright healthy, as in you could eat them for breakfast and Colin Campbell would be proud of you. Others are just way better than eating desserts laden with white sugar, butter, eggs, white flour, and canola oil.

And the really nice thing about these treats is how easy they are to make. A bowl, a food processor, and maybe a blender, and you're all set. You really could make these, if not in your sleep, then at least when you're quite dozy.

Eat lunch before you get here, so you feel good about noshing on the goodies.
